Winemaking:

Handpicked in the early morning to preserve freshness, and concentration of the fruit, the grapes were optically sorted, and processed using gravity flow aspects of winemaking. The ferment was managed with 3 punch downs per day to extract maximum color and aromas. Extended contact time for roughly 20 days helped to push the nuances and expression of the vineyard.

Our 2023 Cabernet Sauvignon reflects the untamed spirit and rugged beauty of this mountain appellation. Intense aromas of blackberry, cassis, and mountain sage unfold into layered notes of graphite, wild herbs, and dark chocolate. On the palate, the wine is bold and structured, driven by muscular tannins and lifted by fresh acidity. The volcanic soils and high-elevation climate yield a wine of compelling tension and depth
